This coffee comes from a remote part of Yunnan, in an area traditionally famous for its exceptional tea. Cherries are grown by farms and purchased directly from small nearby farmers. Mr Tian Cai and Mr Tang have two main motivations for producing specialty coffee: to bring sustainable livelihoods to their families and those of small local farmers in the surrounding area, as well as to make the area more biodiverse (many farms focus on one commercial crop such as bananas). As a result, they are planting macadamia trees, mangoes, orange trees among the tea and coffee fields. Only organic fertilizer is used.
The best extraction according to BrewLab:
A triumph of flavors and aromas. Sweet, slight malic acidity and good body. A fruity aroma, peach and pineapple, accompanies sweet notes reminiscent of honey. On the final notes which recall mint.
A fine and elegant light roasted coffee that we appreciate most in filter extractions and cold brew. For coffee lovers, in moka and espresso this natural explodes in all its complexity.
